Ingredients

  • 2 cups low-carb cereal
  • 1/4 cup butter
  • 2 blocks cream cheese
  • 1/2 cup erythritol
  • 3 tbsp sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • [10 drops liquid stevia]

Steps

  1. Heat the oven to 325 F.
  2. Crush the cereal and mix it with the melted butter, then press it into a greased 9-inch square pan.
  3. Beat the cream cheese, erythritol, sour cream, eggs, vanilla, and stevia until smooth.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 40 to 45 minutes, until the center is set and the eggs are fully firm.
  6. Cool for 10 minutes, then chill until firm.
