Ingredients
- 1 can (15 4/5 oz) black beans
- 2 diced mangoes
- 1 cup sweet red bell pepper
- 1/2 cup red onion
- 1/2 cup cilantro leaves
- 1 tbsp fresh lime juice
- 1 lime
- 1 tbsp olive oil
- 2 tbsp honey
- 1 jalapeno pepper
- 1 tsp salt
- 1/2 tsp black pepper
Steps
- Drain and rinse the black beans in a colander.
- Combine the beans, mangoes, bell pepper, onion, cilantro, and jalapeño in a large bowl.
- Whisk the lime juice, olive oil, honey, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss until evenly coated.
- Squeeze the remaining lime over the salad and serve.
