- 3 cups shredded cooked chicken
- 1 tbsp chili powder
- 1 tsp each ground cumin
- 1/2 tsp each onion powder
- 1/4 tsp cayenne pepper (optional)
- 1 cans (14 1/2 oz) fire roasted diced tomatoes
- 1/4 cup water or chicken broth
- 2 tbsp canned mild chopped green chiles
- 2 tbsp tomato paste
Steps
- Combine the tomatoes, water, tomato paste, chili powder, cumin, onion powder, and cayenne in a 10-inch skillet.
- Bring the mixture to a simmer over medium heat.
- Stir in the shredded chicken and cook for 5 minutes.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Heat until the chicken is steaming hot, about 2 minutes more.
