Ingredients
- 1 tbsp olive oil
- 2 chopped red onions
- 1 finely chopped red chilli
- 1 clove garlic
- chopped coriander
- 800 g cherry tomatoes
- 1 tbsp caster sugar
- 4 eggs
- spinkling feta
Steps
- Heat the olive oil in a 12-inch skillet over medium heat.
- Cook the onions and chopped chili for 8 minutes, stirring until softened.
- Add the garlic and cook for 1 minute, then stir in the tomatoes, sugar, and coriander.
- Simmer uncovered for 20 minutes, stirring occasionally until the tomatoes form a thick sauce.
- Make four wells in the sauce and crack an egg into each well.
- Cover and cook for 8 minutes, until the eggs are firm and reach 165 F.
- Sprinkle the feta over the cooked eggs.
