Ingredients
- 500 g strong bread flour plus extra for dusting (optional)
- 7 g sachet fast-action dried yeast
- 5 tbsp olive oil plus extra for the tin
- 200 g cherry tomatoes halved
- small bunch of oregano leaves picked
- 150 g olives pitted
- 100 g feta crumbled
Steps
- Stir the flour, yeast, 3 tablespoons olive oil, and 350 ml water in a large bowl.
- Knead the dough on a lightly floured surface for 8 minutes.
- Cover the dough and let it rise in a warm place for 25 minutes.
- Press the dough into an oiled 9-by-13-inch baking pan and rest it for 5 minutes.
- Press the tomatoes, oregano, olives, and feta into the dough, then drizzle with the remaining olive oil.
- Bake at 425 F for 20 minutes until golden and cooked through.
