- 1/3 cup unsalted butter
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1/3 cup peach juice
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- 1 2/3 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups peaches
- 1/4 cup peach juice
- 1/4 cup granulated sugar
- 1 cup confectioners sugar
- 1 1/2 tbsp peach juice
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan.
- Beat the butter and granulated sugar until smooth, then beat in the eggs, 1/3 cup peach juice, vanilla, and almond extract.
- Whisk the flour, baking soda, baking powder, and salt in a separate bowl.
- Stir the dry mixture into the wet mixture, then fold in the peaches.
- Spread the batter in the pan and bake for 55 to 60 minutes until a tester comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer it to a rack to cool completely.
- Whisk the confectioners sugar with 1 1/2 tablespoons peach juice, then spread the glaze over the cooled bread.
