Ingredients
- 2 eggs
- 4 1/2 green-yellow plantains
- 1 large onion
- 4 tbsp cassava flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup melted coconut oil or vegetable oil
- 1 cup sour cream
- 1 lime
Steps
- Peel and grate the plantains and onion into a large bowl.
- Stir in the eggs, cassava flour, baking powder, salt, and pepper until evenly mixed.
- Mix the sour cream with the juice and zest of the lime in a small bowl.
- Heat the oil in a large skillet over medium heat, using enough oil to cover the bottom.
- Drop heaping tablespoons of batter into the skillet and fry about 2 minutes per side until golden and firm.
- Drain the latkes briefly on a plate and serve them with the lime crema.
