Ingredients
- 2 tbsp butter
- 4 large leeks
- 6 cups russet potatoes
- 7 cups chicken or veggie broth
- 1 cup heavy cream
Steps
- Melt the butter in a large pot over medium heat, then cook the sliced leeks for 8 minutes.
- Add the potatoes and broth, bring the pot to a boil, and reduce the heat.
- Cover the pot and simmer for 25 minutes, until the potatoes are tender.
- Blend the soup with an immersion blender until smooth, or carefully blend it in batches.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Stir in the heavy cream and simmer uncovered for 5 minutes.
