Ingredients
- 1 tbsp good-quality olive oil
- 1 3/4 lb thin asparagus spears or asparagus tips
- 1/2 tsp italian seasoning
- kosher salt & ground black pepper (optional)
- 3 tbsp freshly grated parmesan cheese (optional)
- 1/2 cup mayonnaise
- 1 clove garlic
- 1 tsp lemon
- heaping 1/2 tsp dijon mustard
- 1/2 tsp fresh thyme
- 1/4 tsp onion powder
Steps
- Heat the oven to 425 F and lightly oil a large baking sheet.
- Wrap small groups of asparagus with prosciutto and place them seam-side down on the baking sheet.
- Brush the bundles with olive oil, season with Italian seasoning, salt, pepper, and Parmesan, and roast for 15 minutes.
- Mix mayonnaise, minced garlic, lemon, mustard, thyme, and onion powder in a small bowl.
- Serve the hot asparagus with the sauce.
