Ingredients
- 1 1/2 cups plain yogurt or light sour cream
- 1/4 cup dijon mustard
- 6 sprigs fresh dill
- 4 stalks celery
- 1 large white onion
- 4 large eggs
- 1/2 tbsp salt
- black pepper (optional)
- 1 tbsp olive oil
Steps
- Chop the celery, onion, and dill, keeping the dill separate for the sauce.
- Stir the yogurt, mustard, and half the dill together in a small bowl, then chill it.
- Beat the eggs with the salt and pepper, then mix in the celery, onion, and remaining dill.
- Heat the olive oil in a large skillet over medium heat.
- Drop the mixture into 8 portions and cook for 4 minutes per side, until firm and the eggs reach 160 F.
- Serve the hot croquettes with the chilled dill sauce.
