Ingredients
- 3 lb russet potatoes
- 3/4 cups shredded peeled apples
- 3/4 cups sauerkraut
- 6 large eggs
- 6 tbsp all-purpose flour
- 2 tsp salt
- 3/4 tsp pepper
- 3/4 cup canola oil
- optional: sour cream and chopped green onions
Steps
- Shred the potatoes and squeeze them dry in a clean towel.
- Mix the potatoes, apples, sauerkraut, eggs, flour, salt, and pepper in a large bowl.
- Heat the oil in a large skillet over medium heat.
- Drop twelve small portions into the skillet and flatten each into a pancake.
- Fry the pancakes for 4 minutes per side until golden and the eggs are firm.
- Drain the latkes on a plate and repeat with the remaining batter.
