- 4 cups brussels sprouts or buy pre-shaved
- 1 honeycrisp apple
- 1/2 cup dried cranberries
- 1/3 cup parmesan cheese
- 1/3 cup sunflower seeds
- 1/3 cup chives
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1 tsp dijon mustard
- 1/4 tsp ground black pepper
- 1/2 tsp salt
Steps
- Shave the Brussels sprouts into thin strips and place them in a large bowl.
- Core and thinly slice the apple, then add it with the cranberries, Parmesan, sunflower seeds, and chives.
- Whisk the olive oil, lemon juice, mustard, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss until everything is evenly coated.
