Ingredients
- olive oil spray
- 1 1/2 lb baby bella mushrooms
- kosher salt
- freshly ground black pepper
- 10 oz frozen chopped spinach
- 4 oz cream cheese
- 1/2 cup freshly grated parmesan cheese (optional)
- 1 cup part-skim mozzarella cheese
- 1/4 cup chopped scallions green for garnish (optional)
- 2 cloves garlic
- 1/4 cup light sour cream
- 2 tbsp italian seasoned breadcrumbs
Steps
- Thaw the spinach and squeeze out as much liquid as possible.
- Remove the stems from the mushrooms and arrange the caps on a serving platter.
- Mix the spinach, cream cheese, Parmesan, mozzarella, scallions, garlic, sour cream, breadcrumbs, salt, and pepper in a bowl.
- Fill each mushroom cap with the spinach mixture.
- Chill the stuffed mushrooms for 20 minutes before serving.
