Ingredients
- 2 cups cooked yellow squash or 2 cups zuccini squash
- 2 cups crumbled ritz crackers
- 1 chopped yellow onion
- 2 cups sharp cheddar cheese
- 2 eggs
- 3/8 cup butter
- salt and pepper
Steps
- Heat the oven to 350 F and grease a 9-by-9-inch baking dish with some butter.
- Melt 1 tablespoon butter in a skillet over medium heat and cook the onion for 6 to 8 minutes.
- Whisk the eggs with the remaining melted butter, salt, and pepper in a large bowl.
- Stir in the squash, cooked onion, crackers, and 1 1/2 cups cheese.
- Spread the mixture in the baking dish and top it with the remaining cheese.
- Bake for 35 to 40 minutes, until the center is firm and the eggs are fully set.
