Ingredients
- 1 lb top sirloin
- kosher salt and fresh cracked pepper (optional)
- 4 oz penne pasta
- 3 oz baby arugula
- 4 tsp olive oil
- 1 1/2 tbsp golden balsamic
- 1/2 oz shaved parmesan or pecorino romano cheese
- 1/2 red onion
- 1 large white onion
- 1 tsp paprika
- 1/2 tsp kosher coarse salt
- 1 tbsp golden balsamic vinegar
- 1 tbsp olive oil
Steps
- Boil the penne in salted water until tender, then drain it.
- Slice the onions, and cook them with the oil in a large skillet over medium-low heat for 15 minutes.
- Season the steak with paprika, salt, and pepper, then sear it in a skillet over medium-high heat for 4 minutes per side, until it reaches 145 F.
- Rest the steak for 5 minutes, then slice it thinly.
- Toss the penne, arugula, onions, golden balsamic, and remaining oil in a large bowl.
- Top with the steak and shaved cheese.
