Ingredients
- 1/2 cup butter
- 1 cup white sugar
- 2 large eggs
- 1 cup very ripe mashed banana
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh strawberries
- 1 tbsp flour
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with butter.
- Beat the butter and sugar until creamy, then beat in the eggs, mashed banana, and vanilla.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
- Stir the dry mixture into the banana mixture until just combined.
- Toss the strawberries with 1 tablespoon flour, fold them into the batter, and spread the batter in the pan.
- Bake for 55 to 65 minutes, until the center is firm and a toothpick comes out clean.
