- 2 1/2 tbsp olive oil
- 1 tsp sea salt
- 1/4 cup natural salted peanut putter
- 1/4 cup dairy-free bittersweet chocolate chips
- 1/4 cup coconut whipped cream
- 1/4 cup pomegranate arils
- 2 tbsp roasted mixed nuts (optional)
- ground cinnamon (optional)
Steps
- Heat the oven to 425 F and line a large sheet pan with the sweet potato fries.
- Toss the fries with olive oil and sea salt, then spread them in one layer.
- Roast for 25 to 30 minutes, turning once, until tender and browned.
- Drizzle the warm fries with peanut butter and sprinkle them with chocolate chips.
