Ingredients
- 1 lb beets
- 1 tbsp olive oil
- salt and black pepper
- 6 cups arugula
- 2 navel oranges
- 1 cup toasted pecans
- 1/2 red onion
- 1/2 cup crumbled feta cheese
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tsp honey
- 1 tsp dijon mustard
- salt and pepper to taste (optional)
Steps
- Peel the beets and slice them into very thin matchsticks.
- Whisk olive oil, vinegar, honey, mustard, salt, and pepper in a small bowl.
- Peel and slice the oranges, then thinly slice the red onion.
- Toss the beets with half the dressing and let them rest for 60 minutes.
- Add the arugula, oranges, onion, pecans, and feta to the beets.
- Toss the salad with the remaining dressing.
