Ingredients
- 1 head cauliflower
- 1 head broccoli
- 2/3 cup chopped green onion
- 1/2 cup chopped medjool dates
- 1/3 cup roasted salted cashews
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup extra virgin olive oil
- 1/4 cup tahini
- 2 1/2 tbsp lemon juice
- 2 tbsp honey
- 2 tbsp dijon mustard
- 1/2 tsp fine sea salt
- 3 tbsp water
Steps
- Cut the broccoli and cauliflower into small bite-size florets.
- Whisk the olive oil, tahini, lemon juice, honey, mustard, salt, and water in a large bowl.
- Add the broccoli, cauliflower, green onion, dates, cashews, and cheddar to the bowl.
- Toss the salad until the vegetables and dressing are evenly mixed, then chill for 5 minutes.
