Ingredients
- 3 lb yukon gold potatoes
- 6 tbsp unsalted butter
- 1 tbsp minced fresh thyme
- 1 tbsp minced fresh rosemary
- 1 tsp salt
- 1/2 tsp each pepper
- 1 1/2 cups low sodium chicken broth
- 1/2 tbsp lemon juice (optional)
- 2 cloves garlic
Steps
- Cut the potatoes into 1-inch pieces and mince the garlic, thyme, and rosemary.
- Melt 4 tablespoons butter in a large skillet over medium heat, then cook the garlic and herbs for 1 minute.
- Add the potatoes, chicken broth, salt, and pepper, cover the skillet, and simmer for 45 minutes.
- Remove the lid and simmer for 10 minutes, turning the potatoes occasionally until the broth mostly reduces.
- Stir in the remaining butter and lemon juice, if using, and cook for 5 minutes until the potatoes are tender and glossy.
