- 2 lb boneless skinless chicken thighs
- 1 can (7 oz) chipotle peppers in adobo sauce
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tbsp chili powder
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 tsp ground cumin
- 3/4 cup water
Steps
- Blend the chipotle peppers, garlic, olive oil, chili powder, salt, pepper, oregano, cumin, and water until smooth.
- Heat a 12-inch skillet over medium-high heat and brown the chicken thighs for 3 minutes per side.
- Pour the chipotle sauce over the chicken and bring it to a simmer.
- Cover the skillet and cook over medium-low heat for 12 to 15 minutes.
- Uncover the skillet and cook until the chicken reaches 165 F and the sauce thickens.
