1 lb small carrots
4 tbsp unsalted butter
1 1/2 chipotles en adobo
2 tbsp honey
1 tsp kosher salt (optional)
1/4 tsp ground black pepper
1 lemon
1/4 cup fresh mint leaves

Steps

Heat the oven to 425 F and arrange the carrots on a baking sheet.
Melt 1 tablespoon butter and toss it with the carrots, salt, and pepper.
