- 1 1/2 cups self raising flour
- 1 tsp baking powder
- 2 tbsp sugar
- 1/2 tsp ground cinnamon
- 1/3 tsp salt
- 1/4 cup butter
- 1 large egg
- 2 tsp pure vanilla extract
- 1 1/4 cup milk
- 1/2 cup chocolate chips
- 4 tbsp sugar
- 1 tsp ground cinnamon
Steps
- Whisk the flour, baking powder, 2 tablespoons sugar, ½ teaspoon cinnamon, and salt in a large bowl.
- Whisk in the melted butter, egg, vanilla, and milk until a smooth batter forms.
- Heat a lightly buttered large skillet over medium heat and spoon in eight small pancakes.
- Sprinkle chocolate chips over each pancake, cover with more batter, and cook for 2 minutes per side.
- Melt the remaining butter in the skillet, then brush it over the cooked pancakes.
- Mix 4 tablespoons sugar with 1 teaspoon cinnamon and coat the warm pancakes before serving.
