Ingredients
- 2 lb russet or yukon gold potatoes
- salt
- 1 stick softened butter (optional)
- 1/2 cup heavy creamy
- salt and ground black pepper (optional)
- 2 tsp fresh parsley
Steps
- Peel and cut the potatoes into 1-inch pieces, place them in a 4-quart pot, cover with water, and add salt.
- Boil the potatoes over high heat for 15 minutes until tender.
- Warm the cream and butter in a small saucepan over low heat for 3 minutes.
- Drain the potatoes, mash them with the warm cream mixture for 5 minutes, and season with salt and pepper.
- Stir in the parsley and heat over low heat for 2 minutes.
