Ingredients
- 8 large eggs
- 3 tbsp chopped onion (optional)
- 1 red pepper
- 1 tsp salt
- 2 tsp curry powder
- 1/4 cup light mayo
- 1 mango
Steps
- Place the eggs in a saucepan, cover with water, and boil for 10 minutes.
- Cool the eggs in cold water for 5 minutes, then peel and chop them.
- Chop the mango, red pepper, and onion into small pieces.
- Stir the eggs, vegetables, mango, mayonnaise, curry powder, and salt together in a bowl.
- Chill the salad for 3 minutes before serving.
