Ingredients

  • 1 1/2 large zucchinis
  • 1 tsp garlic powder
  • 1 tbsp nutritional yeast
  • 1 tbsp tamari-style soy sauce
  • fresh dill (optional)
  • 1 tbsp olive oil
  • 2 tbsp arrowroot powder
  • vegan sour cream (optional)
  • 1 clove garlic (optional)
  • 1 sprig dill (optional)

Steps

  1. Shred the zucchini, toss it with a little salt, and let it drain in a strainer for 20 minutes.
  2. Squeeze the zucchini firmly to remove excess water, then mix it with onion flakes, garlic powder, nutritional yeast, tamari, dill, and arrowroot.
  3. Rest the mixture for 10 minutes so the onion flakes soften and the arrowroot thickens.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Shape the mixture into six small patties and cook them for 4 to 5 minutes per side until browned and firm.
  6. Serve with vegan sour cream, garlic, or dill if using, and finish within 60 minutes.
