Ingredients
- 1 lb white beans
- 1/2 cup olive oil
- 3 carrots
- 2 stalks celery
- 1 onion
- 1 cup tomatoes
- 2 tbsp tomato paste
- 1 tsp salt
- 1/4 tsp ground black pepper
Steps
- Rinse the white beans and place them in a large pot with enough water to cover them by two inches.
- Bring the beans to a boil, then cover and simmer for 40 minutes.
- Chop the carrots, celery, and onion while the beans cook.
- Add the vegetables, tomatoes, tomato paste, olive oil, salt, and pepper to the pot.
- Simmer uncovered for 20 minutes, stirring occasionally, until the beans and vegetables are tender.
