Ingredients
- 2 cups oat flour
- 1 cup unbleached all purpose flour
- 1 cup whole wheat pastry flour
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup chopped fresh figs
- 1 orange
- 1/2 cup chopped walnuts
- 1 tbsp butter
- oats for topping (optional)
Steps
- Heat the oven to 375 F and grease a 9-by-5-inch loaf pan with butter.
- Whisk the oat flour, all-purpose flour, whole wheat flour, baking soda, and salt in a large bowl.
- Stir the buttermilk, orange zest, and orange juice together in another bowl.
- Fold the wet mixture, figs, and walnuts into the dry mixture until just combined.
- Spread the batter in the pan and sprinkle with oats if using.
- Bake for 35 to 40 minutes, until a toothpick comes out clean, then cool for 5 minutes.
