Ingredients
- 2 lb red potatoes
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 1/2 tsp dijon mustard
- 1 shallot
- 2 tsp chives
- 2 tsp tarragon
- 1 tsp parsley
- 1 tsp chervil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Steps
- Cut the red potatoes into 1-inch pieces.
- Boil the potatoes in a medium pot of water for 10 to 12 minutes, until tender.
- Whisk the olive oil, vinegar, mustard, shallot, chives, tarragon, parsley, chervil, salt, and pepper in a large bowl.
- Drain the potatoes well and let them steam for 1 minute.
- Toss the warm potatoes with the dressing and serve warm or at room temperature.
