Ingredients
- 1 onion
- 2 cloves garlic
- 1 lb ground beef
- 15 oz canned pinto beans (optional)
- 1 oz taco seasoning
- 1/2 tsp cumin
- 1/4 tsp salt (optional)
- 2 1/2 cups shredded monterey jack cheese
- 1/2 cup shredded cheddar cheese
- 11 corn tortillas
- 28 oz enchilada sauce
Steps
- Heat the oven to 350°F.
- Cook the onion and garlic with a little oil in a large skillet over medium heat for 4 minutes.
- Add the ground beef and cook for 8 to 10 minutes, breaking it up until it reaches 160°F.
- Stir in the beans, taco seasoning, cumin, salt, and 1 cup enchilada sauce, then simmer for 3 minutes.
- Spread 1 cup enchilada sauce in a 9-by-13-inch baking dish, fill the tortillas with the beef mixture, and arrange them seam-side down.
- Pour the remaining sauce over the tortillas, add both cheeses, and bake for 20 minutes until melted and bubbling.
