3 tbsp melted coconut butter
1/4 cup sunflower seed butter
1 tbsp + 1 teaspoon pure maple syrup
2 tbsp virgin coconut oil
1/2 tsp pure vanilla extract (optional)
1 pinch fine sea salt
1/4 cup virgin coconut oil
1/4 cup unsweetened cocoa powder
2 tbsp pure maple syrup
1 pinch fine sea salt
2 3/4 tbsp unsweetened large flake coconut

Steps

Line eight small cups or muffin wells, then stir the melted coconut butter, sunflower seed butter, 1 tablespoon maple syrup, 2 tablespoons coconut oil, vanilla if using, and a pinch of salt.
Divide the sunflower mixture among the cups and freeze for 3 minutes.
Whisk the remaining coconut oil, cocoa powder, 2 tablespoons maple syrup, and remaining salt until smooth.
Divide the cocoa mixture over the first layer, then sprinkle the coconut flakes on top.
Chill the cups for 10 minutes, until the layers are firm.
