- 2 large peaches
- 1 avocado
- 1/2 small red onion
- 1/2 cup goat cheese crumbles
- 1/2 cup sliced toasted almonds
- 3 tbsp extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 clove garlic
- 1/2 tsp dijon mustard
- optional: 1-2 teaspoon sugar
- freshly ground salt and pepper (optional)
Steps
- Whisk the olive oil, balsamic vinegar, garlic, mustard, and sugar in a small bowl for 1 minute.
- Slice the peaches, avocado, and red onion into thin pieces.
