Ingredients
- 2 1/2 lb bone-in skinless chicken thighs
- 3 tbsp olive oil
- 1 cup roughly chopped fresh pineapple
- 1/2 cup ketchup
- 1/4 cup packed brown sugar
- 3 tbsp molasses
- 1 1/2 tbsp cider vinegar
- 1 tsp dijon mustard
- 1 tbsp mccormick® grill mates® mesquite seasoning
- 1/2 tsp ground ginger
Steps
- Stir the pineapple, ketchup, brown sugar, molasses, vinegar, mustard, mesquite seasoning, and ginger in a bowl for 3 minutes.
- Reserve half of the sauce in a clean bowl.
- Preheat a grill to 400 F for 4 minutes.
- Brush the chicken thighs with olive oil.
- Grill the thighs for 16 minutes, turning halfway through.
- Brush the reserved sauce over the chicken and grill for 4 minutes, until the thickest pieces reach 165 F.
