- 2/3 cup pumpkin puree
- 1 1/4 cup milk
- 3 medjool dates
- 1 tsp vanilla bean paste
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp nutmeg
- 1 pinch kosher salt
- 1/4 cup chia seeds
- 1 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 3 medjool dates
- 1 tsp vanilla bean paste
- 1 pinch kosher salt
- 1/4 cup chia seeds
Steps
- Blend the pumpkin puree, 1 1/4 cups milk, 3 dates, vanilla bean paste, cinnamon, ginger, nutmeg, and salt until smooth.
- Stir 1/4 cup chia seeds into the pumpkin mixture.
- Blend the remaining milk, cocoa powder, 3 dates, vanilla bean paste, and salt until smooth.
- Stir the remaining 1/4 cup chia seeds into the chocolate mixture.
- Layer the two mixtures in six small containers.
- Cover and chill the puddings for 5 hours, until thick.
