Ingredients

  • 1 cup vinegar
  • 1/2 cup water
  • 1/2 cup shredded carrots
  • 1/2 cup shredded radish
  • 1/3 english cucumber
  • 1/2 red onion
  • 1 clove garlic
  • 1 tbsp chopped green onion
  • 1/2 tsp sea salt
  • 1/2 tsp sugar
  • 1/4 tsp dried oregano leaves

Steps

  1. Combine the vinegar, water, salt, sugar, and oregano in a small saucepan.
  2. Bring the brine to a simmer over medium heat for 2 minutes.
  3. Pack the carrots, radish, cucumber, red onion, garlic, and green onion into a heatproof container.
  4. Pour the warm brine over the vegetables.
  5. Let the vegetables stand for 2 minutes.
  6. Refrigerate the pickles for 10 minutes before using.
