Ingredients
- 100 g unsalted butter softened
- 65 g caster sugar
- 65 g light brown sugar
- 2 large eggs room temperature
- 125 g greek yogurt
- 1 tsp vanilla paste
- 5 tbsp milk
- 250 g self-raising flour
- 1 tsp baking powder
- 200 g raspberries
- 75 g white chocolate chips
Steps
- Heat the oven to 375 F and line a 10-cup muffin pan with paper liners.
- Beat the butter, caster sugar, and brown sugar until smooth.
- Beat in the eggs, yogurt, vanilla paste, and milk.
- Stir in the self-raising flour and baking powder until just combined.
- Fold in the raspberries and white chocolate chips, then divide the batter among the cups.
- Bake for 22 minutes, until the muffins are golden and firm in the centers.
