Ingredients

1 1/4 lb baby red potatoes
1 lb medium carrots
3 tbsp olive oil
1 tbsp minced fresh thyme
1 tbsp minced fresh rosemary
salt and freshly ground black pepper
12 oz green beans
1 1/2 tbsp minced garlic

Steps

Heat the oven to 425 F.
Halve the potatoes and cut the carrots into bite-size pieces.
Toss the potatoes and carrots with the oil, thyme, rosemary, salt, and pepper on a large rimmed baking sheet.
Roast for 25 minutes.
Add the green beans and garlic, toss everything together, and roast for 15 minutes more.
Rest the vegetables for 5 minutes before serving.
