1 1/2 golden beet peeled and cubed
1 1/2 cup chopped fennel
1 1/2 cup chopped leek
1 sweet potato peeled and cubed
5 cloves garlic whole

Steps

Heat the oven to 425 F and oil a large roasting pan.
Toss the beets, fennel, leek, sweet potato, garlic, salt, pepper, and herbs in the pan.
Spread the vegetables into one layer and cover the pan with foil.
Roast for 25 minutes, then remove the foil and stir the vegetables.
Roast uncovered for 15 to 20 minutes, until the vegetables are tender and browned.
