2 spaghetti squash
2 tsp olive oil
salt (optional)
6 tbsp salted butter
2 tsp chopped fresh parsley (optional)
1 cup finely shredded parmesan cheese

Steps

Heat the oven to 400 F.
Halve the squash lengthwise, remove the seeds, and brush the cut sides with olive oil.
Place the squash cut-side down on a large baking sheet and roast for 35 minutes, until tender.
Melt the butter in a large skillet over medium heat for 5 minutes, until golden and fragrant.
Scrape the squash into strands and toss them in the browned butter.
