Ingredients
- 3 lb medium yukon gold potatoes
- 1 tbsp salt + 1/2 tsp
- 6 oz bacon
- 2 tbsp olive oil
- 1/4 tsp black pepper
- 1/2 cup parmesan cheese shredded
- 2 cloves garlic
- 1/4 cup chopped parsley
Steps
- Heat the oven to 425 F and line a large baking sheet with oil.
- Cut the potatoes into chunks and boil them in salted water for 10 minutes.
- Cook the bacon in a skillet over medium heat for 10 minutes, then crumble it.
- Toss the potatoes with the olive oil, pepper, and garlic on the baking sheet.
- Roast the potatoes at 425 F for 45 minutes, turning them halfway through.
- Sprinkle the bacon and Parmesan over the potatoes and roast for 5 minutes.
- Stir in the parsley and serve hot.
