1 1/2 lb baby red or baby yukon gold potatoes
1 tbsp olive oil
4 tbsp unsalted butter
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp each dried parsley
1/4 cup freshly finely grated parmesan cheese
2 1/2 tbsp chopped chives
sour cream (optional)

Steps

Heat the oven to 425 F and boil the potatoes in salted water for 25 minutes, until tender.
Melt the butter with the olive oil, garlic powder, salt, and parsley.
Drain the potatoes and arrange them on a large baking sheet, then gently flatten each one.
Brush the potatoes with the seasoned butter and bake for 25 minutes.
Sprinkle on the parmesan and chives, then bake for 5 more minutes until crisp.
