400 g water
225 g active sourdough starter
600 g all-purpose flour
18 g salt
1/2 cup unsalted butter
5/8 cups confectioners' sugar
1 1/2 tbsp heavy whipping cream
1/2 tsp vanilla extract

Steps

Mix the water, starter, flour, and salt in a large bowl, then knead for 8 minutes.
Cover the dough and let it rest in a warm place for 20 minutes.
Roll the dough into a large rectangle, spread it with half the butter, fold it into thirds, and roll it out again.
Spread the remaining butter and half the confectioners' sugar over the dough, roll it tightly, and place it in a greased 9-by-5-inch loaf pan.
Cover the pan and let the dough rise for 15 minutes while heating the oven to 375 F.
