- 1/2 tsp salt
- 3 bananas
- 3/4 cup white sugar
- 1 large egg
- 1/3 cup unsalted butter
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 tsp ground cinnamon
- 2 tbsp cold unsalted butter
Steps
- Heat the oven to 375 F and line 10 muffin cups with paper liners.
- Whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
- Mash bananas in a large bowl, then mix in sugar, egg, melted butter, and vanilla.
- Stir the dry mixture into the banana mixture just until combined, then divide it among the muffin cups.
- Rub brown sugar, flour, cinnamon, and cold butter together in a small bowl, then sprinkle the crumbs over the batter.
- Bake for 18 to 20 minutes, until a toothpick comes out clean.
