Ingredients
- 2 tbsp vegetable oil
- 1 white onion
- 2 large garlic cloves
- 3 cups tomato
- 2 tbsp parsley
- 2 chipotle peppers in adobo
- 3 cups chicken
- salt and pepper to taste (optional)
Steps
- Heat the oil in a large skillet over medium heat.
- Cook the chopped onion and garlic for 4 minutes until softened.
- Add the tomatoes and chipotle peppers, then cook for 6 minutes until the tomatoes break down.
- Stir in the chicken and simmer for 12 minutes until hot and tender.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Season with salt and pepper, stir in the parsley, and cook for 2 minutes.
