Ingredients
- 2 tbsp unsalted butter (optional)
- 1/2 cup chopped shallots
- 10 oz broccoli florets
- 1 tsp salt
- 6 large eggs
- 1 3/4 cups heavy cream
- 1 pinch ground nutmeg
- 1/8 tsp cayenne pepper
- 1 1/2 cups shredded gruyère
Steps
- Heat the oven to 350 F and butter a 9-inch pie dish.
- Cook the shallots in a skillet over medium heat for 3 minutes, then add the broccoli and cook for 5 minutes.
- Whisk the eggs, cream, salt, nutmeg, and cayenne in a large bowl.
- Spread the broccoli mixture and Gruyère in the pie dish, then pour the egg mixture over them.
- Bake for 45 to 50 minutes, until the center is firm and the eggs are fully set.
- Rest the quiche for 10 minutes before slicing.
