Ingredients
- 3 1/2 seedless cucumbers
- 1/4 red onion
- 1 cup non-fat plain greek yogurt
- 1 clove garlic
- juice from 1/2 lemon
- 1/4 cup chopped fresh dill (optional)
- 1/4 cup chopped fresh mint (optional)
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Steps
- Slice the cucumbers and red onion thinly.
- Toss the cucumbers with salt and let them drain in a colander for 20 minutes.
- Stir the yogurt, garlic, lemon juice, dill, mint, and pepper in a large bowl.
- Squeeze excess liquid from the cucumbers and mix them with the onion and yogurt dressing.
- Chill the salad for 40 minutes.
