Ingredients
- 3 cups kale
- 3 cups red cabbage
- 1/2 cup red onion
- 1/2 cup red bell pepper
- 1 avocado
- 1 cup chopped parsley
- 2 cloves garlic
- 1 tbsp lemon juice
- 1/2 cup water
- 2/3 cup olive oil
- 1/2 cup pine nuts
- salt and black pepper to taste (optional)
Steps
- Blend the avocado, parsley, garlic, lemon juice, water, olive oil, salt, and pepper until smooth.
- Chop the kale, red cabbage, red onion, and bell pepper into bite-size pieces.
- Add the vegetables to a large bowl and massage them for 2 minutes.
- Pour the avocado dressing over the vegetables.
- Add the pine nuts and toss until evenly coated.
