Ingredients
- 1 large cauliflower
- 2 1/2 tbsp cornflour
- 300 ml whole milk
- 1 1/2 tsp english mustard
- small bunch of thyme leaves picked
- 150 g mature cheddar (optional)
- 25 g butter
Steps
- Cut the cauliflower into florets and place it in a covered microwave-safe dish with 2 tablespoons water.
- Microwave the cauliflower on high for 8 minutes, stirring halfway, until tender.
- Whisk the milk, cornflour, mustard, thyme, and butter in a large microwave-safe bowl.
- Microwave the sauce on high for 3 minutes, whisking every minute until thick.
- Stir in the cheddar, pour the sauce over the cauliflower, and microwave for 3 minutes until bubbling.
- Let the dish stand for 5 minutes before serving.
