- 8 chicken thighs
- 1 tbsp vegetable oil
- 2 tbsp lime juice
- 3 cloves garlic
- 1/2 tsp ground coriander
- 1/2 tsp ground black pepper
- 1 tsp ground cumin
- 1 tsp mexican oregano
- salt to taste (optional)
Steps
- Heat the oven to 425 F and oil a 9-by-13-inch baking dish.
- Mix the lime juice, garlic, coriander, pepper, cumin, oregano, salt, and vegetable oil.
- Coat the chicken thighs with the spice mixture and arrange them in the dish.
- Roast the chicken for 35 minutes, until browned and the thickest part reaches 165 F.
- Rest the chicken for 5 minutes before serving.
