Ingredients
- 1/2 cup farro
- 5 oz baby spinach
- 3/4 pint strawberries
- 1/2 cup basil
- 3 oz feta or goat cheese
- 1/2 small red onion
- 1/2 cup dried cherries
- 1/2 cup roasted pepitas
- 1 avocado
- 1/2 batch best balsamic vinaigrette
Steps
- Use cooked, cooled farro and wash and dry the spinach, strawberries, basil, and avocado.
- Slice the strawberries, red onion, and avocado, then chop the basil.
- Combine the farro, spinach, fruit, onion, dried cherries, and pepitas in a large bowl.
- Add the cheese and toss gently to combine.
- Pour the balsamic vinaigrette over the salad and toss for 1 minute.
